Yummy Baked Oatmeal

Today I made a delicious Baked Oatmeal for our breakfasts this week.  It’s a great alternative to just plain regular oatmeal.   I am totally looking forward to this tomorrow morning!!

The recipe is very simple and serves 3, I doubled the recipe to fit in my bigger casserole dish and to have enough for breakfast most of the week:

– 1 cup of oats

– 1 cup of blueberries

-2 ripe bananas

-1/2 cup of raisins (I substituted dried cherries instead, I don’t like raisins as much)

-1/4 cup of almond milk (or regular milk if you choose)

-1 handful of walnuts

– 2 tablespoons of cinnamon

Preheat oven for 375.

Put oats in a bowl and cover them with boiling water for 10 minutes, to get them soft.  Chop up the bananas and crush the walnuts into smaller chunks.

After the oats have absorbed the water add in the remaining ingredients, and then place the mixture in your casserole dish.  If you want to have it look nicer save some of the ingredients to place on top.

Bake for 20 minutes until browned on top.  Enjoy!  We also added a little bit of brown sugar on top to add more sweetness to it when we warmed it up in the morning.  That part is up to you!  It is yummy we definitely recommend it!!

New Year, New Me

Cooking is always such an adventure with finding new recipes and having hits and misses.  So I’ve decided to document my cooking and health journey on this blog.  I’ve recently signed up for a half marathon to motivate myself to get healthier as well as really focusing on what we are eating!  So here’s to a great start to a new year!!
